The response to the gluten-free Chicago style pizza I posted earlier today was great. I wanted to share this recipe for gluten-free pizza crust. It comes from the King Arthur Flour site. I love their products & knew they would have ideas for those needing gluten-free alternatives.

Meatless Chili

It is a cool & cloudy day here in SoCal. Glancing over the posts of friends on FB, it appears to be a cold & snowy day in other parts of the country. Today is the perfect day for my vegetarian chili recipe!

I began making this dish for my friends who are vegetarians.However, many of my meat loving guests also enjoy my special chili.It is made with 4 kinds of beans and plenty of spices to make it thick and flavorful.

  • 1 large can chili beans
  • 1 large can pinto beans
  • 1 large can kidney beans
  • 1 large can black beans
  • 1 cup frozen chopped onions
  • 1 cup frozen chopped green pepper
  • 1 large can crushed tomatoes
  • 1 small can of tomatoes with chilies
  • 1 large can of tomato sauce
  • 1 box vegetable broth
  • garlic salt
  • chili powder
  • hot sauce
  • salt and pepper

Pour chili beans into large crock pot. Drain and rinse other beans. Add to crock pot.

Mix.Add onions and green peppers. Add tomatoes and tomato sauce.Season to taste. Top pot with broth, making chili stirrable but not “soupy.”Simmer on low 4-6 hours adding broth as needed.

Tonight's Simple Dinner

All 3 crock pots are humming away with tonight’s dinner. I am teaching the Christian Women Writers Workshop tomorrow. Lots to prepare today. Ok, so some things to prepare today & I want to relax so I have energy for tomorrow.

Tonight’s dinner is daughter, Katy’s favorite:

  • Crumpled Hamburger;
  • Mashed Potatoes;
  • Corn.

Katy would probably prefer green beans but I like the corn with this meal. The crumpled hamburger idea came from my husband. When Mr. D was just a boy, his mom was sick a few times. Dad had to take care of things at home, including the feeding of 3 boys. One of the meals Dad fixed was crumpled hamburger fried with potato cubes. Dad would brown the burger & add chopped up potatoes. Brown both & serve with a veggie.

When I was in grad school, Mr. D. ran things at home. This was a dish he made often & one of Katy’s favorites. I now prepare it in my slow cooker. I cook on high until almost done, then turn down to low. When completely browned, I drain & return the burger to the cooker which I keep on warm until dinner.

My slow cooker mashed potatoes work well & taste great. I prefer to steam my potatoes but, if I am preparing other items in the slow cookers, I cook the potatoes this way too so I can prepare everything all at once.

A simple & hearty meal for a busy night. Enjoy!

What's for Dinner? Pork Roast

I admit it. I sometimes get so focused on my work that I forget to fix dinner! Ok, I don’t completely forget dinner. I just remember so late in the afternoon that I have to fix something fast. I enjoy making good meals for my family. How do I balance the two? CROCK POTS! I have 3 crock pots: small, medium & large. These 3 allow me to fix great meals without the hard work. In fact, I use all 3 to make Thanksgiving dinner… but that’s another story. The crock pots allow me to fix dinner in the morning after everyone has left. Dinner cooks all day & I can focus on my work. Cooking meat in the crock pot means I can buy less expensive cuts of meat. The meat simmers in broth all day, coming out tender & juicy.

Tonight’s Dinner

  • Pork Roast
  • Mashed Potatoes
  • Carrots
  • Green Beans
  • Homemade Wheat Bread
  • Brownies

No, I don’t cook like this every night. I pre-heated the oven while putting dinner together. While the brownies baked, I put the bread ingredients in my bread machine. As I write this, the bread & dinner are cooking, the brownies are cooling (& calling my name!)

I began by cleaning the carrots, cutting them into chunks & cutting the larger pieces in half. I line the bottom of the crock pot with the carrots.

I then put the pork on top of the carrots.


I added 2 cups of water, 2 tablespoons of Worcestershire sauce & 2 tablespoons of soy sauce. I pour the 2 sauces over the meat.  I water helps keep the meat tender. I use the broth this makes either to make gravy or I strain it & freeze it for the next pork roast. The roast is now ready to cook. I put it on high. Half hour before dinner, I take the roast off the heat to make it easier to slice.

Next, the potatoes. I peel & cut them in half, put them in my medium pot, add water & salt. I cook these on high.  Sometimes I turn them down to low if they are bubbling lots.
