Chocolate Chip Cake Mix Cookies

You have your small group coming over today & there’s no time to run to the store for refreshments. Now what? Easy! Make a batch of these delicious & oh-so simple cookies for your gathering. Everyone will want the recipe & will never believe you when you give it to them! Oh, you better make a second batch for your family. I guarantee you won’t have any leftover for them!

  • 1 box Duncan Hines™ butter cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 teaspoon vanilla
  • Chocolate chips

CC cookie batterPreheat oven to 350 degrees. In bowl, mix oil, eggs & vanilla. Add cake mix, mixing thoroughly. The mix may have lumps. Just work it with a spatula until all the dry lumps are mixed in. Add chocolate chips. I have used semi-sweet, a mix of milk chocolate & semi-sweet (half a bag of each) & mini chips. Just add enough chips to it is perfect for you.

Use parchment paper on your cookie sheets. This allows you to prepare all your batches with only 2 cookie sheets. Spoon out batter on paper, 12 if small, 9 if large. Bake 11-12 minutes. Allow to cool. Store in air tight container. Enjoy with cold milk or hot chocolate!

Cake Mix Snickerdoodles

I teach a Bible Study for women every Tuesday evening. We meet for dessert first so we can visit before we begin our class. I usually bake cookies for the group every week. Well, not just cookies but cake mix cookies! I have found great joy discovering new ways to create yummy cookies for my family, friends & people at church.

Last week, I noticed a recipe for Snickerdoodles on the box of Duncan Hines yellow cake mix. Snickerdoodles are one of my very, very favorite cookies but I never baked them. With this recipe, I will be baking them all the time. I am sharing the recipe below Use the Duncan Hines cake mix to make your Snickerdoodles. Other mixes then to make cookies that have a cake-like consistency. These look & taste like regular cookies. So easy. I like to impress people with my smarts as well as my talent in the kitchen. Nothing is smarter than finding a simpler way to do something!

Snickerdoodles

  • 3 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 2 package Duncan Hines yellow cake mix
  • 2 large eggs
  • 1/4 cup vegetable oil

Preheat oven to 375 degrees.

Combine cinnamon & sugar in small bowl.

Mix oil, eggs & a splash of vanilla together. The recipe didn’t call for vanilla but it can’t hurt!)

Scrap sides well. Mix by hand.

Add cake mix & blend well. The mix becomes a bit lumpy. Just keep working it with a spatula until it is smooth.

Shape dough in 1″ balls & roll in sugar mixture.

The recipe says you should grease your cookie sheets. I always use parchment paper. It is fabulous! It allows me to make all my sheets of cookies while only having 2 actual cookie sheets! I was able to get 9 cookies on each sheet. You can flatten the cookies with the bottom of a glass. I didn’t. I like them looking rugged!

Bake for 8-9 minutes. Allow to cool completely. Store in air tight container. Great with spiced tea, hot apple cider or cold apple juice!

Strawberry Lemon Cake Mix Cookies

Duncan Hines lemon cake mix
1/2 cup vegetable oil
2 eggs
1 cup finely chopped fresh strawberries

Preheat oven to 350 degrees. Mix oil & eggs. Add cake mix, blending well. Gently stir in strawberries. Drop by spoonful onto parchment paper covered cookie sheets. Bake 14 minutes or until brown around edges. Allow to thoroughly cool & set. They are soft so you may want to let them set out for awhile. Store in fridge.

Great with lemonade or tea.

Tonight's Simple Dinner

All 3 crock pots are humming away with tonight’s dinner. I am teaching the Christian Women Writers Workshop tomorrow. Lots to prepare today. Ok, so some things to prepare today & I want to relax so I have energy for tomorrow.

Tonight’s dinner is daughter, Katy’s favorite:

  • Crumpled Hamburger;
  • Mashed Potatoes;
  • Corn.

Katy would probably prefer green beans but I like the corn with this meal. The crumpled hamburger idea came from my husband. When Mr. D was just a boy, his mom was sick a few times. Dad had to take care of things at home, including the feeding of 3 boys. One of the meals Dad fixed was crumpled hamburger fried with potato cubes. Dad would brown the burger & add chopped up potatoes. Brown both & serve with a veggie.

When I was in grad school, Mr. D. ran things at home. This was a dish he made often & one of Katy’s favorites. I now prepare it in my slow cooker. I cook on high until almost done, then turn down to low. When completely browned, I drain & return the burger to the cooker which I keep on warm until dinner.

My slow cooker mashed potatoes work well & taste great. I prefer to steam my potatoes but, if I am preparing other items in the slow cookers, I cook the potatoes this way too so I can prepare everything all at once.
